School Day Food Diary

On a normal day I enjoy a Slim-Fast shake for breakfast and lunch and have a regular meal for dinner; however now that I have school Wednesday nights I'll be enjoying my meal of the day for lunch. While browsing Target the other day I came across this:

I've heard of Couscous but have never had it. The picture made it look pretty tasty and it seemed like it would be very filling. (It was so filling in fact that I couldn't finish the bowl). This meal has 300 calories and 1 gram of fat, just the right amount of calories so I could also enjoy some of these:
I've seen Knudsen's Cottage Cheese Doubles, but have hesitated trying them. While I like all of the flavors, I'm not sure if I would like them to go together. I'm glad I decided to give them a go, I really enjoyed the Pineapple and Cottage Cheese together. I love trying new things and loving them!

To keep my hunger under control in class I brought along a few snacks, Special K Chocolatey Pretzel Bar (super yummy, it's like a healthy candy bar), a 100 calorie pack of Coco Roasted Almonds, and of course tons of water! I think I may have been a fish in another life!

Being that it was the first day of school of course I took a picture. I felt only slightly cheesy but I love documenting these kind of things. I feel sorry for my future children and all the first day of school pictures I'll be taking.

Back to School

That's right, it's back to school time! I am so excited to finally be getting back into college and finishing my degree. Tomorrow I officially start at Azusa Pacific University where I will complete my Bachelor's Degree in Liberal Studies. WOO-HOO! I'm on my way to becoming a teacher : ]

My very best friend, Katie finished her teaching credential this past June and was lucky enough to find a teaching job starting this fall. To celebrate her awesome accomplishment I made a School Supplies Cake for her. I was inspired by this found on Pinterest, of course!
It was pretty cheap to put together because school supplies are on sale right now. Her school colors are yellow and purple, so I tried to add touches of that.
To build the base I used an plastic cookie container, wrapped the outside with crayons and secured with rubber bands. To add some height and substance I wrapped three Lysol Wipes together and attached to the top of the cookie container, then added the folders alternating the colors. Next I added the glue sticks then secured that layer with more rubber bands.
I used a Styrofoam circle to create a solid level inside of the folders and added flash cards and few extra boxes of crayons. The next layer is 4 boxes of pencils, with alternating sharpeners and erasers. To complete the look I added purple and yellow ribbon, I even made the bow! I'm very excited about that!

I gave it to Katie and she loved it! She took it to her classroom to show it off a bit before breaking into it to use the supplies. I'm sending all of my good vibes and mo-jo to her during her first few weeks of teaching. I know she'll do an excellent job and make a difference in those children's lives. Can you tell I'm a super proud BFF?!?

Walking & Eating at The Happiest Place on Earth

Today we ventured to my favorite place in the whole world, Disneyland! Originally we were going to go golfing today for some out door activity but the course was pretty full and we were having intermittent thunder storms; so we passed. Then we thought about going bowling, but I happen to check to see if our DL passes were blocked today and miracle of all miracles they weren't. So off we went.

We had already talked about walking to the park from the parking structure for some added exercise, normally we beat the trams anyway. But today they guided us to a different parking lot, the Toy Story Lot, and they were busing people to the park. We really wanted to walk, so we set out towards that magical place. We ended up walking about a mile to the entrance, I used my iPhone to track our route using MapMyRun. It's an awesome app to help keep track of runs, walks, biking; it calculates the distance, average speed, and time. And it keeps the records for you to review them if desired.

When we entered the park we headed to Star Tours but the wait was 75 minutes, umm no thanks. So we ventured on and came across Captain Eo, there wasn't a wait so we grabbed out 3D glasses and went in. It was ok, I really enjoyed the music, but it was a little weird. Next we headed across the park to It's a Small World, my very favorite ride. Andrew was a good sport while I sang along.

Next we crossed the park again to head to Pirates of the Caribbean, but the line was crazy long so we kept walking towards The Haunted Mansion. It was closed, in preparation for Halloween. Boo! So we kept on and found our selves at Splash Mountain. We don't normally go on that attraction because of the long wait times, but it said it was about 40 minutes so we jumped in line. We got soaked! Our log was loaded down with heavy people and boy oh boy did we make a splash! When we got off Andrew actually wrung the water from his sock!

We trudged back to Rancho Del Zocalo to have lunch. I always get the same thing there, the Red Chile Enchilada Platter. It comes with 3 cheese enchiladas with red sauce, mexican rice, refried beans and a side of sour cream and guacamole. I switched the guac for some extra sour cream. And because I didn't take a picture of my food, please enjoy this photo found on the web.

I ended up eating all three enchiladas, and about half the rice and beans. I tracked my calorie intake as best as possible because I can not find the nutritional value for any of the meals there. (If you know where it is please share with me). My lunch came to about 880 calories, so this will be my big meal of the day.
After lunch we headed home, one of the perks of having a pass. We can come and go as we please visiting as many or as few attractions as we want. But we'll be heading back in 2 weeks for my birthday!

Let's start at the beginning...or at my heaviest

I have always been the "Big Girl", the heaviest of all my friends and I thought I would always be that girl. In January of 2010 I was the heaviest I had ever been, 280 pounds. I was miserable and bursting out of my clothes.

Lucky for me my office decided to put together a Biggest Loser Challenge in Feb 2010 and I joined in. I started right around 275. To get motivated I started eating oatmeal for breakfast, Lean Cuisine for lunch and a healthy meal for dinner. I started doing Zumba a few times a week and walking my dog, Sheldon. The contest ended in mid April and I won! I lost 20 pounds. I was really happy with my success. Unfortunately my motivation didn't last once the Challenge was over. However I didn't really gain any of the weight back. And I can no longer stand the taste of Lean Cuisine.
April 2009-Las Vegas
One of my 2011 resolutions was to get back on my healthy living track. I started this year at 248.2. I really enjoyed Zumba so I started going twice a week; and this time I had a partner Kirsten. It's great working out with someone to keep you accountable. I kept this up through the end of February, at the end of  the month I was at 244.1. At this point I stopped making fitness a priority and fell off the wagon.

Slowly but surely my weight started creeping back up (246.6), at the beginning of May I started Yoga & Zumba (again). I also found this great website MyFitnessPal, it tracks your calories and exercise and started using that. Unfortunately I wasn't ready to be as dedicated as I needed to be and I stopped tracking my food and stopped going to the classes.

Through June I ate what I wanted and didn't exercise and by the end of the month I was at 253.3. I'm not exactly sure what happened at this point in my life but I realized I did not want to be this unhealthy person.

On June 27, I started my new life. I now track my food and exercise religiously with MFP. It's still a daily struggle but its getting easier with each passing day.

I'm still here...& Resolution Update VIII

I know it's been about a month since my last post and it seems that I have left my blog to flounder. But I am back to resuscitate it!

I was feeling pressured to make crafty items, even though I may not have a place to put them, just so that I could blog about them. I've decided to change the direction of my blog and use it more as a journal and less craft orientated. Of course I'll still share things that I make it will just be a smaller amount.

I totally missed my Resolution Update for May, so I'll share a quick recap:

Healthy Living:
My life got a little wonky in May, I switched birth control brands and it totally messed with my hormones and made me crazy! So after being on it for about 3 weeks, I emailed my doctor and got back on my old one. So now I'm back to normal.

While I was out of sorts I was eating all kinds of crazy food, like I had cake for lunch one day, and a few days later a bag of mini chocolate donuts. I know I can't blame it all on the hormone change, I'm still the one in control of what I put into my body. So needless to say I didn't lose any weight. BOO!

No Fast Food: Even though I was all hormonal I was still able to keep this resolution in May. I'm pretty proud of myself for that :)

Blog 2-3 times a week:
Well if you're a follower then you know I failed miserably at this task. I just wasn't feeling it. Though I was still a lame-o and checked my stats pretty often. I actually thought about a lot of different posts I wanted to do but didn't do a darn thing about them.

Scrapbook/Crafty Project:
I failed here too! Again I thought a lot about some projects I want to do but did nothing. Nada, Zilch! I'm hoping for a more productive month in June.

Education Plan:
I got a registration date for RCC (local community college) to make up a class that I didn't do so well in for the program I'll be starting in the fall. Hopefully I'll get my class before it's full!

Time with Friends & Family:
I did much better in this category, work took us out to El Torito for dinner and drinks. Which always leads to the best time EVER! I love my Riverside Ave Crew!

A few days later we said good bye to Tiffany with dinner at a local restaurant and a few more drinks :) I didn't realize how much purple I have in my closet :D
We also celebrated Mother's Day at our house, Handy Andy prepared a lovely brunch, and I set the table. We had both my parents and little brother over. It was a really nice day. For my Mom's gift I gave her a gift certificate to Glen Ivy Hot Springs Spa, with the added bonus of me as her guest :)

Read 24 Books:
During the month of May I finished Sliding Into Home, by Kendra Wilkinson and Bossy Pants by Tina Fey. I really enjoyed Fey's book, it made me laugh out loud quite a few times. I liked Kendra's book too, I loved the Girl's Next Door so it was nice to get a peek behind the camera.

Hopefully you all are still on track with your resolutions, I hope to get going in the right direction again.

The Other Man in My Life

You all know how much I adore my husband but I must tell you about the other man in my life. He's a handsome little guy, with big brown eyes, blonde hair and he gives the best kisses! 

In case you haven't figured it out, its my furry four legged child Sheldon! I love that little guy, we aren't quite sure what he's made of, but its a great combination! Debbie and Lucy over at Debbiedoo's Blogging and Blabbing are hosting a pet party, be sure to check it out and share about your favorite pet!

I thought I'd share a mini album I created about my love bug!

The picture on the left was around the time we adopted Sheldon (July 2008), he looks so small there. Please don't judge us but we do share people food with Sheldon and he likes LOVES french fries!

I've developed a bad habit, every time I go to pick up Sheldon's favorite treats I always end up getting him a new toy. I can't help myself, I know he loves playing with them, he loves them all: stuffed, squeaky, rubber, rope.

Sheldon loves playing with my parents' Boston Terrier Bella, they always have a blast together. They love to chase each other and play tug o' war, too cute!
